Pennsylvania Dutch Apple Pie

I used to live in Northern Indiana for 6 years, followed by 2 years in Central Pennsylvania. All those 8 years I was living in the vicinity of the Amish lands.
Living near the Amish people (and sometime among a few former ones) really gave me quite an interesting perspective. It’s pretty hard to express all this in a post, but today I want to share one thing that they do well, in fact really really well: apple pie.
Living in California for 3 years, I started to miss those ‘Pennsylvania Dutch Apple Pies’. And as my apple tree started to give me some fruits last fall, all the memories started to come back. I started to look for recipes, and experimented with them. Finally I have one that I think quite good. I can probably say that this is an award winning recipe, as it won (tied) a small bake-off last Christmas at Spikesource.
So here is the recipe for an 9-inch pie:
A. Filling
- 5 – 7 large apples depending on size. Golden delicious or Granny Smith are good.
- 1/2 cup of all purpose flour
- 1/2 cup of sugar
- 1 tea spoon of salt
Peel, core and slice apples to small wedges. Mix sliced apples with all the dry ingredients.
B. Topping
- 1/2 cup of all purpose flour
- 1/2 cup of sugar
- 1/2 stick of butter.
Mix sugar and flour in a mixing bowl. Break the butter in the mixture with a fork until you get small chunks of butter covered in flour.
C. Making the pie
Use a 9-inch Graham crackers pie crust. Arrange the filling into the pie crust, put slightly more in the middle. Sprinkle the topping liberally on the pie. Bake on 350°F for 60 – 75 minutes until the topping is golden brown.

Graham cracker crust? YUCK. Why take a shortcut?
Crust is the easiest friggin part!!! Mix some flour with butter (lard, if you have it) and salt, roll it out thin. Super easy, much better than nasty graham cracker crust.

Chaos, sorry man… I kinda like the mixture of different textures.
Graham cracker crust works well I think.. Oreo cookie crust will certainly not, though…
